I can’t eat any seafood at all because of my allergy, but Japan is famous for its sashimi and such. I don’t want to miss out on the fun but I’m concerned about meal times.
How do I say “I’m allergic to seafood” to the restaurant staff?

Having any kind of food allergy certainly makes mealtimes challenging, especially if you are in a foreign country. Seafood is a big part of Japanese cuisine so you may want to mention this to the restaurant staff in advance.
You can say the following:
(1) シーフードアレルギーがあります。
Shiifuudo arerugi ga arimasu
I have seafood allergy.
(2) シーフードを抜(ぬ)いてください。
Shiifuudo o nuitekudasai
Please remove the seafood.
